09 Apr 2019 Apple-Carrot Quinoa Salad with Lemon-Lime Honey Dressing & Links to NEW Pesach Shiurim
This is a delicious and filling salad, perfect for your Pesach, or any time of the year, table. Healthy, tasty and easy to prepare, this salad is a great accompaniment to any meal.
Apple-Carrot Quinoa Salad with Lemon-Lime Honey Dressing
In a pot, cook 1 c. white quinoa in 2 c. water, till the water is absorbed. Turn off the flame and drizzle the quinoa with a bit of light tasting olive oil. Transfer the quinoa to a large bowl to cool.
While the quinoa is cooling prepare the dressing. In a measuring cup or small bowl, combine:
2 1/2 Tbsp. fresh lime juice
2 1/2 Tbsp. fresh lemon juice
(You should have approx. 1/3 c. fresh citrus juice)
1/4 c. light tasting olive oil
2 cubes frozen basil
1/4 c. + 2 Tbsp. honey
dash black pepper
1/2 tsp. sea salt
Stir all together and set aside.
To the quinoa add:
1 Granny Smith apple, peeled and diced
3/4 finely diced carrots, peeled (you can also use shredded carrots, if you prefer)
add a couple of handful honey glazed almond sticks
1/2 c. diced scallions (approx. 2 scallions)
Pour the dressing over the salad and toss all ingredients together to combine.
Refrigerate and serve the salad cold, with the meal of your choice. Or for a tasty and quick chol ah’moed lunch, top the salad with a piece of grilled salmon.
