Apple Cinnamon Muffins

Chanukah 5775.  Blessed is Hashem, שֶׁהֶחֱיָנוּ וְקִיְּמָנוּ וְהִגִּיעָנוּ לַזְּמַן הַזֶּה, Who has kept us alive and sustained us until this very day.  Chanukah is the YomTov that reminds us that our light – the light of Torah and mitzvos – can brighten much darkness.  What seems bleak is bright, what seems dark is light, and what seems hopeless actually contains within it the great potential for redemption.  From one flask of oil great miracles were wrought.  May we be blessed with the ultimate light, which will one day shine again from the House of Hashem, may it be soon and in our days.

These apple cinnamon muffins are easy, pretty healthy for a muffin, and delicious.  No mixer required!  Enjoy.

Apple Cinnamon Muffins – preheat oven to 375*

Prepare streusel topping and set aside: ¼ c. brown sugar, 3 Tbsp. white whole wheat flour, ½ tsp. cinnamon, 2 Tbsp. oil, ¼ c. chopped nuts (optional)

Mix dry ingredients in a bowl:
2 c. white whole wheat flour, 3 tsp. baking powder, 1 tsp. cinnamon, ½ tsp. baking soda, ¾ c. brown sugar, dash salt

In a different bowl (or large measuring cup), combine:
1 c. soy milk, 1 ½ tsp. lemon juice, ¼ c. oil, 2 eggs, 1 tsp. vanilla extract

Add the wet ingredients to the dry.  Add 2 c. peeled and diced granny smith apples to the batter.  Fold in the diced apples and mix just till all ingredients are combined.  Spoon batter into paper lined muffin cups.  Sprinkle each muffin with a spoon of streusel topping.

Bake for 16 – 17 minutes, until cake tester inserted into the center of the muffins comes out dry.  Cool muffins on a wire rack.

Yield: 16 muffins
