Apple Honey Muffins

This is a perfectly sweet, simply delicious muffin for your Rosh Hashanah and Yom Tov table.  The first run, with the original recipe that I wrote, was so-so and needed lots of tweaking 🙂  Suffice it to say that I’m not sharing that one with you!

The second run, which I am happily sharing below, was a great surprise and takes just minutes to throw together – no mixer required!  This is a perfect muffin, with great flavors, beautiful color, a light texture, and the right balance of honey and sweetness. 

Apple Honey Muffins

Pre-heat the oven to 350*.  Line 12 muffin cups with paper liners (for standard size muffins). 

In a large bowl, combine:

1 1/2 c. white whole wheat flour, dash salt, 1 1/2 tsp. baking powder, 1/4 tsp. baking soda, 1 tsp. cinnamon, 1/4 c. light brown sugar.

In a different bowl, combine:

1/3 c. oil, 1/2 c. honey, 2 lightly beaten eggs, 1/2 c. orange juice.

Add the wet ingredients to the dry, stirring all to combine, till batter is mixed.

Gently fold in 1 Gala apple, peeled and diced.

Spoon batter into paper lined muffins cups.  Bake on 350* for about 20 minutes, till muffins are dry.  Cool on wire racks.

Yield: 12 standard size muffins.

Note: if you prefer smaller muffins, especially as a side dish for your Yom Tov meal, use tin foil muffin cups – filling the cups only halfway.  Or try these as mini muffins!  Adjust baking time accordingly for smaller muffins.
