Chicken Apple Salad & Recipes for your Yom Tov table

This scrumptious chicken salad is perfect for any time you have cold, leftover BBQ chicken, and you are not sure exactly what to do with it (but don’t want to throw it out!).

This salad is delicious served on whole-wheat toast, atop a lettuce salad, or alongside cut cucumber and baby carrots.  Filling, tasty, low fat and healthy, this chicken salad is a winner, and will be enjoyed by all.

It’s also makes a really nice – and different – Shabbos or Yom Tov appetizer course. 

Chicken Apple Salad

Into a medium-size mixing bowl, add:

1 stalk celery, finely diced

1/4 red pepper, finely diced

1 scallion, chopped

1/2 an apple (such as Gala or Golden Delicious), peeled and diced

To the vegetables, add:

2-3 pieces of shredded cold roast chicken, bones and skin removed (using gloved hands, preparing the chicken takes only a few minutes).  You can use some white meat and some dark meat, according to your preference. 

To the bowl, add:

2 (heaping) spoons low-fat mayonnaise

1 Tbsp. (light tasting) olive oil

1 Tbsp. apple cider vinegar

1 Tbsp. honey

1/2 Tbsp. dijon mustard

black pepper and parsley flakes to taste

crushed red pepper flakes (To taste! Use only a dash or two if you don’t like your food too spicy)

Mix all together, till well combined.  Serve cold.
