Colorful & Tasty (Not Your Typical) Corn Salad

This salad is super easy to throw together, and with its array of colors, visually appealing.  The taste of the ingredients comes together surprisingly well; it’s deliciously addictive! 

This salad is a nice change from the typical corn salad, and perfect for any Shabbos, Yom Tov, or even weekday table.

Colorful & Tasty (Not-your-Typical) Corn Salad

In a bowl, combine:

1 (15 oz.) can sweet golden corn niblets, drained

1 (11 oz.) can White Shoepeg corn niblets, drained

1 (15oz.) can Sweet Peas, drained

1 (red or orange) bell pepper, seeded and diced

1 can (14 oz) Hearts of Palm, sliced

Prepare the dressing, by combining:

2 Tbsp. oil (I use light tasting olive oil), 1 cube frozen parsley, 3 Tbsp. sugar, 3 Tbsp. white vinegar (if you want it a bit sweeter, you can do 4 Tbsp. each sugar and vinegar), 2 Tbsp. cold water, sprinkle ground black pepper, sprinkle mustard powder, 1/4 tsp. sea salt.

Pour the dressing over the salad, stirring gently to combine.  Serve chilled.
