Mocha Muffins

This is an oft-requested recipe for delicious, yet not-too-heavy on calories, Mocha Muffins, that both adults and kids will enjoy.  Delicious with a cup of coffee or tea, or even better with a cold glass of milk.  Easy to prepare and tasty to eat, this recipe is a winner every time!  Enjoy 🙂

Mocha Chocolate Chip Muffins, oven to *350 – Yield: 12 standard size muffins

In a large bowl, combine: 1/3 c. oil, 1/3 c. natural (no-sugar added) applesauce, 2 eggs, 2/3 c. orange juice, 1 tsp. vanilla extract, 4 tsp. instant coffee granules dissolved in 2 tsp. hot water, ¾ c. sugar, ½ tsp. lemon juice.

Mix all ingredients together with a rubber spatula or wooden spoon.

To the bowl add in: 2 c. white whole wheat flour, 1 tsp. baking powder, dash salt.

Stir all ingredients together just until combined; do not over-mix or muffins will be tough.  Add in 1/3 c. chocolate chips (or ½ c. if you like your muffins with more chocolate and don’t mind the extra calories!).  For an extra bold coffee flavor, substitute mocha chips for chocolate chips – or try half chocolate and half mocha chips, for a tasty mix.

Spoon batter into muffin cups lined with muffin papers. Bake about 20 minutes, until cake tester inserted into the center of the muffins comes out dry.  Remove muffins from oven and cool on wire racks.

Note: This recipe can easily be doubled, and freezes very well.
