After I served them at Tuesday Parsha Class this week, I received the following email from a friend who took a cookie to go: “I just ate one of your delicious cookies. Must have this recipe please.”
So for all of you who love to bake, and want a sweet treat that’s on the healthier side, here it is…
Low-Fat Seriously Delicious Oatmeal Raisin Chocolate Chip Cookies
Dry Ingredients: 1 c. whole wheat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon baking soda, dash salt, 3/4 c. brown sugar, 1 1/3 c. oats, 3/4 c. raisins, 1/4 c. chocolate chips
Wet Ingredients: 1/4 c. soy milk, 1 tsp. lemon juice, 2 Tbsp. canola oil, 1 egg, 1 tsp. vanilla extract.
Pre-heat oven to 350*. Line 2 cookie sheets with parchment paper.
Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl (or in a pyrex measuring cup). Add wet ingredients to dry ingredients. Stir together with a spatula or wooden spoon, until the dough forms.
Drop cookie dough by the spoonful onto the lined cookie sheet (about 12 cookies per baking sheet). Bake for 12 minutes, until cookies are lightly browned. Do not over bake. Remove cookie sheet from oven. Allow the cookies to cool for a minute or two on the baking sheet; then transfer the cookies to a cooling rack.
Yield: 24 cookies
Note: *If you want more chocolate, reduce raisins to 1/2 c. and increase chocolate chips to 1/2 c., keeping in mind that your cookies will no longer be as low-fat!
*If you find that your oven bakes quickly, please check your cookies before the 12 minute mark!
