RECIPE: Here is a quick-to-throw-together, healthy and tasty, scrumptious-on-challah, Tomato Dip recipe for your Shabbos (or any other!) table. Don’t be scared off by “tomato” dip. I shared it recently with someone who said, “I’m not usually a fan of tomato dip, but this is delicious!” Try it yourself and you’ll see why. My thanks to my sister-in-law for the inspiration for this recipe.
Deliciously Addictive Tomato Dip
In the bowl of the food processor, fitted with the S-blade, combine:
7 ripe plum tomatoes (quartered, stems removed), 5 cubes frozen garlic, 2 cubes frozen parsley, one spoon dijon mustard, dash black pepper, sprinkle sea salt, 1/3 c. oil, 1 Tbsp. sugar.
Blend all together till smooth. Store dip in fridge. Serve alongside challah, crackers, veggies, or as you wish 🙂
This yields a significant amount of dip; feel free to share some with a friend or neighbor…or invite company to share it at home with you.
