Yummy Easy Caramel Cake

In honor of Chanukah (and considering that I have not posted a recipe in a while…), here is a yummy Caramel Cake recipe.  It meets my criteria of delicious, moist, easy to make, on the lower fat side, kids-won’t-know-it-it’s-so-good 🙂

Delicious Caramel Cake

In the bowl of an electric mixer, fitted with the paddle attachment, beat together:

1 c. brown sugar, 3/4 c. sugar, 1/2 c. oil, 1/2 c. natural (no sugar added) applesauce, 1 tsp. vanilla extract, 4 eggs.

Beat all together for a few minutes.  To the bowl add:

2 c. white whole wheat flour, 1 c. white flour, 1 Tbsp. baking powder, dash salt.

With the mixer on low speed, slowly add in 1 c. orange juice (or 1 c. parve soy milk).

Raise the mixer speed to medium, and beat all together, scraping down sides of bowl as necessary. 

Pour the batter into a greased tube pan (my preferred choice of pan for cakes).  Sprinkle the top of the cake with 1/2 c. (parve) caramel chips. 

Bake on 350* for 50 minutes, till cake tester inserted into the center of the cake comes out clean.  Cool cake on wire rack.

Glaze: 3/4 c. confectioners (powdered) sugar, 1 Tbsp. brown sugar, 1/2 tsp. vanilla extract, 1 1/2 Tbsp. cold water.  Mix all glaze ingredients together well.  Drizzle over the cake.

Slice, serve, eat and enjoy!
