Apple Honey Lokshin Kugel

Here is a lokshin kugel recipe in honor of the upcoming yomim tovim, when we have a custom to eat apples and honey for a sweet new year.  It’s super easy to prepare, delicious, and will be enjoyed by all!  It’s perfect for the yomtov or Shabbos table anytime of year, but especially nice to serve during the holiday season of Tishrei. 

Apple Honey Lokshin Kugel

Cook one 12 oz bag of thin lokshin according to package directions.  Drain the noodles well.  Transfer the lokshin to a large mixing bowl.  To the lokshin, add:

1/2 c. oil

2 apples, peeled and finely diced or shredded (you can use Golden Delicious, Ginger Gold, or Gala)

2 tsp. cinnamon

1/2 c. honey

1/4 c. brown sugar

2 tsp. vanilla extract

3 eggs, lightly beaten

Mix all the ingredients together.  Transfer the noodle mixture to two 9” round foil pans.  Cover the pan(s) and bake on 350* for 60-80 minutes, till set (according to the heat of your oven).
