Best Blondies

As Purim approaches, as well as longer Shabbasos, this is a great blondie to have on hand.  It might be the easiest baking recipe ever, and will be enjoyed by kids and kids-at-heart!  These blondies take about 5 minutes to throw together, and freeze perfectly (if there are any leftovers to get into the freezer!).

Best Blondies

Pre-heat the oven to 350*.  Line the bottom of a 9×13 foil pan with parchment paper. 

In a mixing bowl combine:

2 eggs

1 c. light brown sugar

3/4 c. oil (I use canola)

With a spatula or wooden spoon, stir all together to combine.  To the bowl, add:

1 1/2 c. white whole wheat flour (yes, using white whole wheat flour makes me feel as if these are slightly healthier, even if that might be totally psychological in this instance…)

1 tsp. baking powder

dash salt

1 package (3.5 oz) instant vanilla pudding

3/4-1 c. chocolate chips

Mix all together.  Spread and press the batter into the prepared pan.  Bake for about 28-30 minutes, rotating the pan halfway through baking.
