Sweet Potato Muffins (Pesach – Gebrokts & Non-Gebrokts options)

This is a super easy recipe (no peeler, pot or mixer needed), and yields a delicious muffin, great for side dishes at your Yom Tov meals, or as a snack for the kids (or adults!) in the afternoon. 

Pre heat the oven to 350*, and prepare 24 muffin cups.  For ease of preparation, and especially because it’s Pesach, using the foil muffin tins will ease your work!  You need 4 foil muffin tins, each which holds 6 muffins, for this recipe, which yields 24 muffins.

Please read the recipe in its entirety before making these muffins, so you see all the available options and decide which is right for you!

Sweet Potato Muffins

In a large mixing bowl, combine:

1 c. sugar

1/2 c. brown sugar

4 (4 oz. each) containers Sweet Potato-Applesauce baby food

3 eggs, lightly beaten

1/2 c. oil

1/2 c. natural (no sugar added) applesauce

1 tsp. vanilla extract

Using a spatula or wooden spoon, mix all together.  To the bowl, add:

3/4 c. cake meal and 1/4 c. potato starch (Gebrokts, does not contain nuts)

OR

1/2 c. finely ground almonds and 1/2 c. potato starch (Non-Gebrokts, contains nuts)

Add in:

1 tsp. baking soda

2 tsp. baking powder

1 1/2 tsp. cinnamon

dash salt

Mix all ingredients together till combined.  Spoon batter into prepared muffin tins.  Bake on 350* for about 25-30 mins.  Remove pans from oven and allow muffins to fully cool. 

Lower fat method: For the oil and applesauce, use 1/4 c. oil and 3/4 c. natural applesauce.

    If I only have sweet potato baby food, would that work? Should I substitute 4 oz.applesauce for one jar of sweet potato baby food in order to compensate?

      You can certainly use jars of only sweet potato baby food; and substituting a jar of applesauce is a nice idea. Enjoy!
