Sweet Milichig (Dairy) Lokshin Kugel with Apple

This is a delicious kugel, super fast to put together, and will be enjoyed by adult and kids alike.  It is a nice addition to any dairy meal and can also be served at room temperature for a later afternoon Shabbos seuda shlishis.

Sweet Milichig Lokshin Kugel with Apple

Cook one 12 oz. package of medium width lokshin according to package directions.  Drain well and allow to cool slightly. 

While the lokshin is cooking, in a large dairy mixing bowl, combine:

1 container (16 oz/1 lb.) cottage cheese (I use low fat 1% cottage cheese)

1 c. sugar

1 1/4 tsp. cinnamon

2 tsp. vanilla extract

2 eggs, beaten

8 oz. sour cream

1 Gala apple, peeled and diced very fine

Mix all together well.  Add the cooked lokshin to the cheese batter, stirring well to combine.

Divide the lokshin batter between one 9×13 foil pan and one 8” round foil pan.

Cover the pans tightly and bake on 350* for 60-75 minutes, till the kugels are set (bake time will depend on your oven).  Remove from the oven and enjoy!
